Does anyone know how to hide/get rid of the date on a review?

Unfortunately, Shopify doesn't support hiding the date on reviews. However, you can use other review apps to customize reviews on Shopify. "Loox Reviews" works well in this regard. It's a paid tool that allows you to edit dates and even create your own reviews. Consider using Ryviu if you are looking for a free option.
