Applying sorting rules to a specific item type?

Hi, I sell hair products on my e-commerce store. I was wondering whether it is possible to apply sorting rules to products of a particular type. I haven't used any Shopify apps or extensions, so I am unsure whether an app would help me with this issue. Ideally, I would be able to mark the items I want the sorting rules to apply to.
