How do I remove the optional payment methods? I'm trying to get rid of Paypal, Apple and Google.

How do I remove the other optional payment for methods from my Shopify store?

You will need to go to Shopify settings and click the option for "Payment providers". I know that with Shopify Payments, you can click "Edit" and then you will be able to untick the boxes as you like.
