How do I get monthly reports on the fees I pay to Shopify and Paypal?

If you are using Shopify Payments, the data for the credit card fees can be found here - Go to Settings > Billing. Scroll to Financial Overview (bottom of the page) > view financial overview. Adjust the dates as needed To find out how much you paid in fees to Paypal, you'd need to log in to your Paypal account and generate a report.
